Pork Chops with Brandied Pears

Ingredients:

6 center cut loin pork chops (5-6 ounces each)

1 tablespoon olive oil

1 teaspoon Chinese five spice

½ teaspoon salt

¼ teaspoon black pepper

3 cups of pear halves in juice

4 tablespoons honey

1/3 cup red wine vinegar

1 tablespoon brandy (bolder, more refined) or pear liquor (lighter and sweeter)

½ teaspoon black pepper

Yield: 4-6 servings

Preparation:

Drizzle pork chops with olive oil, then sprinkle with five spice, salt and 1/4 teaspoon black pepper. Rub chops to evenly disperse spices.

Mix the following in a bowl: pear halves, honey, red wine vinegar, brandy, ½ teaspoon black pepper. Set aside.

Heat skillet over medium heat.

Place pork chops in skillet. Cook 4-6 minutes per side until heated through and 145 degrees. (Adjust cook time for thicker pork chops). Remove to plate.

Pour pear mixture into skillet and quickly bring to a boil stirring constantly, scraping up the brown bits in the pan. Reduce heat and simmer 2-3 minutes.

Suggested side: Couscous seasoned with garam masala, parsley, salt and pepper.
