Cindy's Gingerbread

1/2 cup butter or margarine

1/2 cup brown sugar

1/2 cup molasses

31/2 cups flour

1 teaspoon baking soda

1 teaspoon ginger

1/2 teaspoon salt

1/4 teaspoon cloves

1/3 cup water

Cream butter and sugar with mixer. Beat in molasses. Blend all dry ingredients alternately. Add dry ingredients and water to butter mixture. Dough will become stiff. Refrigerated dough will keep up to one week but be sure to remove it three hours prior to cooking so it softens. Bake at 375 F for 8-10 minutes.

Royal icing glue for gingerbread house

3 tablespoons Wilton meringue powder

1 pound (4 cups) confectioner's sugar

6 tablespoons warm water

Beat all ingredients until icing forms peaks (7-10 minutes at low speed with heavy-duty mixer; 10-12 minutes at high with hand mixer). Makes 3 cups. Keep covered with damp cloth. Store in air-tight container (no need to refrigerate). Reheat on low before use.

They might not be quite as fancy as the famed holiday gingerbread village in the Hyatt Regency Reston Hotel. But students can learn how to build and decorate their own gingerbread houses in classes throughout Fairfax County.
